Cooking a beautiful lasagne is easy, but it does take a bit of time. With the mince place it on a chopping board, then loosen it up and season with salt and pepper. Then straight into a smoking hot pan to brown off. Make sure you place it in relatively gently and away from yourself. Then whilst the meat is cooking off prepare the onion, dice it into small pieces. Also crush and slice two cloves of garlic. When the meat is cooked drain the excess oil and water from the meat into the mince box to throw away. At this point add tinned tomatoes, onions, garlic and basil and allow to simmer away. After 10 minute add tomato puree to thicken. Whilst this is cooking it is time to make the white sauce (Béchamel) you have two options here you could cheat, or the cheaper option is to make your own.
How to make a roux.
Step 1 – Make a roux, which is 25 grams of butter melted into a pan, and then add 25 grams of flour. Cook together for 2 minutes. If you don’t have scales which most students don’t then roughly 2 and a half tablespoons of flour and then one and a half table spoons of butter.
Step 2 – Add 600ml of milk, then bring to the boils stirring until it becomes a smooth sauce.
Step3 – Allow to simmer for 8-10 minutes.
Optional Step 4 – At this point I like to add cheese to create an extra thick cheesy sauce.
Then grab a baking dish and start layering up your lasagne. For the pasta sheets, I use dry lasagne sheets. I go with a layer of bolognese, then I add a layer of pasta sheets. Then a layer of the white sauce and start again. Keep layering up to the top or when you run out of sauces. When you do take grated cheese and spread evenly over the top and place in the over at 180 degrees for about half an hour or the top of the lasagne is golden and crispy. Then slice up into rectangles and carefully take out your portion, with what is left place tinfoil over and allow to cool. Once the lasagne is cool take the portions and a mixture of freezing and refrigerated for later use. That or agree with your flatmates for everyone to put in a bit of money towards it and have a big meal together! Make life cheaper for everyone.
