Pork and Apple tray bake:

  1. Serves 3
  2. Duration 1 hour
  3. Ingredients:
  4. 6 Pork sausages
  5. Red onion
  6. 3 potatoes
  7. 2 sweet potatoes
  8. 2 carrots
  9. 6 garlic cloves
  10. Sprinkling of rosemary or sage (or any herbs in your cupboard)
  11. 3 apples (any type of apples will do)


  • Pre-heat oven to gas mark 7/220 degrees.
  • Peel potatoes, sweet potatoes and carrots and chop in any chunky, rustic form.
  • Chop red onion into segments
  • Place all ingredients bar the apples into a baking tray. At this point sprinkle over any herbs you’d like or have in your cupboard, a teaspoon of one or two will do. Rosemary or sage is recommended. Drizzle with oil and place in centre of oven.
  • Cut apples into segments and separate garlic cloves from the bulb but do not peel.
  • After 30 minutes take tray out of the oven move all the ingredients in the pan about to ensure even cooking. Drop apple segments and garlic cloves all across the tray and place back in the oven for the last 30 minutes.
